Whisk (if using flour to thicken)
- 2 cups broccoli florets fresh or frozen
- 2 tablespoons olive oil or butter
- 6 cloves garlic minced
- 2 small shallots finely chopped
- 1 cup heavy cream or milk for lighter version
- 1 cup vegetable broth or stock
- 1 tablespoon all-purpose flour optional, for thicker sauce
- Salt and ground black pepper to taste
- Fresh parsley chopped, for garnish (optional)
Bring a pot of water to a boil, add the broccoli, and cook for 4–5 minutes, or until tender. Drain and set aside.
Warm olive oil or butter in a skillet over medium heat. Sauté garlic and shallots until fragrant and slightly golden.
Add the broccoli florets, stirring for 3–4 minutes until they are bright green and slightly tender.
Pour in the vegetable broth and let it simmer for 5 minutes. If using flour, whisk it in now to thicken the sauce.
Lower the heat, add heavy cream (or milk), and stir gently until the sauce is smooth and silky.
Sprinkle with salt and black pepper to taste, garnish with fresh parsley, and serve hot over pasta, rice, or grilled meats.
