Equipment

  • Medium skillet or saucepan
  • Wooden spoon or spatula
  • Measuring cups and spoons
  • Knife and cutting board
  • Whisk (if using flour to thicken)

Ingredients

  • 2 cups broccoli florets fresh or frozen
  • 2 tablespoons olive oil or butter
  • 6 cloves garlic minced
  • 2 small shallots finely chopped
  • 1 cup heavy cream or milk for lighter version
  • 1 cup vegetable broth or stock
  • 1 tablespoon all-purpose flour optional, for thicker sauce
  • Salt and ground black pepper to taste
  • Fresh parsley chopped, for garnish (optional)

Instructions

  • Bring a pot of water to a boil, add the broccoli, and cook for 4–5 minutes, or until tender. Drain and set aside.
  • Warm olive oil or butter in a skillet over medium heat. Sauté garlic and shallots until fragrant and slightly golden.
  • Add the broccoli florets, stirring for 3–4 minutes until they are bright green and slightly tender.
  • Pour in the vegetable broth and let it simmer for 5 minutes. If using flour, whisk it in now to thicken the sauce.
  • Lower the heat, add heavy cream (or milk), and stir gently until the sauce is smooth and silky.
  • Sprinkle with salt and black pepper to taste, garnish with fresh parsley, and serve hot over pasta, rice, or grilled meats.
