Caribbean BBQ Sauce is a vibrant blend of tropical sweetness, smoky spices, and a hint of heat. Perfect for marinating, glazing, or dipping, this sauce infuses any dish with the exotic flavors of the Caribbean, bringing a taste of island life to your table.
1scotch bonnet pepperfinely chopped (seeds removed for less heat)

1tbspfresh lime juice

Instructions
Heat the olive oil in a medium saucepan over medium heat. Add the finely chopped onion, minced garlic, and scotch bonnet pepper. Sauté until the onions are translucent and the aromatics are fragrant.
Pour in the dark rum to deglaze the pan, allowing the alcohol to cook off.
Mix in the pineapple juice, apple cider vinegar, tomato ketchup, brown sugar, and molasses. Incorporate the soy sauce, Worcestershire sauce, and Dijon mustard. Add allspice, ground cinnamon, ground ginger, ground cloves, cayenne pepper, and black pepper.
Bring the sauce to a simmer and let it cook on low heat for about 20-25 minutes until it thickens.
Stir in fresh lime juice and kosher salt. Adjust seasoning to taste.
Optionally, use an immersion blender or a regular blender to puree the sauce for a smoother consistency.
Notes
If you’re new to using scotch bonnet peppers, handle them with care as they are extremely spicy. Wearing gloves might be a good idea to protect your skin.
