Ingredients
  

  • 1 tablespoon olive oil
  • 4 cloves garlic minced
  • 4 Italian sausages mild or spicy, based on preference
  • 2 boneless skinless chicken breasts, cut into bite-sized pieces
  • 2 cans of tomatoes diced or whole
  • 1 can tomato paste
  • Salt and black pepper to taste
  • 1 tablespoon dried basil
  • 1 teaspoon dried oregano
  • 1 tablespoon balsamic vinegar
  • Fresh parsley chopped (for garnish)
  • 1/4 teaspoon red pepper flakes optional, for heat

Instructions
 

  • In a large skillet or Dutch oven, heat olive oil over medium heat. Once the oil is hot, add minced garlic cloves. Sauté for about 1 minute until the garlic becomes fragrant and starts to turn golden brown.
  • Add Italian sausages to the skillet. Cook for 5-7 minutes, turning them occasionally until they’re browned on all sides. Remove the sausages from the skillet and set them aside on a plate.
  • In the same skillet, add boneless, skinless chicken breasts cut into bite-sized pieces. Cook for 5-7 minutes, stirring occasionally, until the chicken pieces are browned and cooked through.
  • Lower the heat to a simmer. Return the browned sausages to the skillet. Add tomatoes (including their juice), and tomato paste, and season with salt, black pepper, dried basil, balsamic vinegar, and dried oregano. Stir everything together until well combined.
  • Bring the mixture to a gentle simmer. Cover the skillet and let it cook for 20-25 minutes. Stir occasionally to ensure the sauce doesn’t stick to the bottom of the pan. The sauce should thicken and the flavors will meld together beautifully.
  • Taste the sauce and adjust the seasoning as needed. If you prefer a bit of heat, stir in red pepper flakes.
  • Before serving, sprinkle freshly chopped parsley over the top for a touch of color and freshness.

A glass of robust red wine pairs wonderfully with the rich flavours of this dish. The acidity of the wine complements the tomato sauce so you can use red wine instead of balsamic vinegar.
