Ingredients
  

  • 500 g chicken bone-in or boneless
  • 2 tablespoons olive oil
  • 1 medium onion finely chopped
  • 3 cloves garlic minced
  • 2 medium tomatoes chopped or 1 cup tomato puree
  • 1 teaspoon paprika optional
  • ½ cup half and half
  • ½ teaspoon chili flakes or green chilies optional
  • 1 teaspoon cumin powder optional
  • Salt black pepper (adjust to taste)
  • 1 cup water adjust for desired thickness
  • Fresh coriander for garnish

Instructions
 

  • Heat the olive oil in a pan over medium heat. Add the finely chopped onion and sauté until it turns soft and golden. Stir in the minced garlic and cook until fragrant.
  • Add the chopped tomatoes or tomato puree to the pan. Mix in paprika, cumin powder, chili flakes or green chilies (if using), along with salt and black pepper. Let the mixture simmer for 3–4 minutes until the tomatoes soften and the flavors meld.
  • Place the chicken pieces into the pan and coat them well with the tomato-spice mixture. Cook for 4–5 minutes, allowing the chicken to lightly brown and absorb the base flavors.

  • Add water (adjust your choice). Cover the pan and let the chicken simmer on medium-low heat for 20–25 minutes, or until cooked through and tender.
  • Lower the heat and pour in the half and half. Stir gently to create a creamy, rich sauce. Let it cook for another 3–4 minutes without boiling, so the cream blends smoothly.
  • Taste and adjust seasoning if needed. Turn off the heat and sprinkle fresh coriander on top for a bright, fresh finish.
