Ingredients
  

  • 1 cup cottage cheese
  • 1 can 14 oz crushed tomatoes
  • 2 cloves garlic minced
  • 1 small onion finely chopped
  • 1 tablespoon olive oil
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/4 cup milk
  • 1 teaspoon apple cider vinegar balsamic vinegar
  • 1/2 teaspoon dried parsley
  • 1/4 teaspoon sugar
  • Salt and pepper to taste
  • Cooked pasta of your choice such as spaghetti or penne, for serving

Instructions
 

  • Heat olive oil in a skillet over medium heat. Add minced garlic and chopped onion. Sauté until fragrant, about 3-4 minutes.
  • Stir in crushed tomatoes, dried basil, dried oregano, dried parsley, sugar, salt, and pepper. Simmer for 10 minutes, stirring occasionally.
  • In a blender or food processor, combine cottage cheese, milk, and apple cider vinegar until smooth.
  • Add the blended mixture to the tomato sauce in the skillet. Stir well to combine and simmer on low heat for an additional 5 minutes to allow flavors to meld.
  • Meanwhile, cook pasta according to package instructions until al dente. Drain and set aside.
  • Toss the cooked pasta with the creamy cottage cheese tomato sauce until well coated.

Notes

You can adjust the consistency of the sauce by adding a splash of pasta cooking water if it becomes too thick.
