- 1 pound 450g chanterelle mushrooms, cleaned and roughly chopped
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- 1 medium shallot finely minced
- 2 garlic cloves minced
- ½ cup 120ml chicken or vegetable broth
- 1 tablespoon all-purpose flour
- 1 cup heavy cream
- ½ teaspoon fresh thyme leaves
- 2 teaspoons Worcestershire sauce
- Salt and freshly ground black pepper to taste
- Fresh parsley finely chopped (for garnish)
Heat a large skillet over medium heat. Add the butter and olive oil, letting them melt together until the butter begins to sizzle.
Add the minced shallot and cook for 2–3 minutes until it softens and turns translucent. Stir in the garlic and sauté for another minute, releasing its fragrant aroma.
Toss the chopped chanterelle mushrooms into the skillet. Sauté them for 6–8 minutes, stirring occasionally, until they release moisture and brown slightly.
Sprinkle the flour evenly over the mushrooms, stirring constantly to coat them. Cook for 1–2 minutes to remove the raw flour taste.
Slowly pour the broth while stirring to deglaze the pan, ensuring no lumps form. Let the mixture simmer gently for 2–3 minutes, thickening slightly.
Reduce the heat to low and stir in the heavy cream, thyme leaves, and Worcestershire sauce. Allow the sauce to simmer for 5–7 minutes, thickening to a creamy consistency.
Season the sauce with salt and freshly ground black pepper, adjusting as needed.
Remove the skillet from heat and garnish with finely chopped fresh parsley before serving.
