Instructions
In a saucepan, melt butter or olive oil over medium heat. Toss in the chopped onion and cook until soft and golden. Add minced garlic and sauté for another minute.
Mix in the diced green chilies, ground cumin, oregano, and season with salt and pepper. Cook for 2–3 minutes to blend the flavors.
Lower the heat and stir in the sour and heavy cream (or milk). Let it simmer gently for 5 minutes—don’t let it boil!
Add a splash of lime juice for a zesty lift. Stir well until smooth and creamy.
Finish with chopped parsley or basil if desired. Serve warm over tacos, grilled chicken, pasta, or as a dip.
