Ingredients
  

  • 2 tablespoons butter or olive oil
  • 1 small onion finely chopped
  • 2 –3 garlic cloves minced
  • 1 4- ounce can dice green chilies
  • ½ cup sour cream
  • ½ cup heavy cream or milk for a lighter version
  • 1 teaspoon lime juice
  • ½ teaspoon ground cumin
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper to taste
  • Fresh parsley or basil chopped — for garnish (optional)

Instructions
 

  • In a saucepan, melt butter or olive oil over medium heat. Toss in the chopped onion and cook until soft and golden. Add minced garlic and sauté for another minute.
  • Mix in the diced green chilies, ground cumin, oregano, and season with salt and pepper. Cook for 2–3 minutes to blend the flavors.
  • Lower the heat and stir in the sour and heavy cream (or milk). Let it simmer gently for 5 minutes—don’t let it boil!
  • Add a splash of lime juice for a zesty lift. Stir well until smooth and creamy.
  • Finish with chopped parsley or basil if desired. Serve warm over tacos, grilled chicken, pasta, or as a dip.

Notes

For a smooth sauce, transfer the mixture to a blender or use an immersion blender to purée until smooth. (Skip this step if you like a chunky texture.)
