Equipment

  • Medium saucepan
  • Stirring spoon

Ingredients

  • 2 tablespoons vegetable oil
  • 1 cup ketchup
  • 1/4 cup apple cider vinegar
  • 1/4 cup brown sugar
  • 1 tablespoon dry mustard
  • 1 tablespoon curry powder
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1 teaspoon ground cinnamon
  • 1 tablespoon minced fresh ginger root
  • 1/4 teaspoon cayenne pepper optional, for heat
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  • In a medium saucepan, heat vegetable oil over medium heat. This is the first step to infuse the oil with flavors.
  • Once the oil is hot, add minced fresh ginger root. Sauté until fragrant, which takes about 1-2 minutes.
  • Stir ketchup, apple cider vinegar, and brown sugar. Mix well to combine all the wet ingredients.
  • Add the dry ingredients, dry mustard, curry powder, paprika, garlic powder, onion powder, ground cumin, ground coriander, and ground cinnamon. Stir to ensure all the spices are well integrated.
  • Season the mixture with cayenne pepper (if using), salt, and black pepper. Adjust the heat to low and let the sauce simmer.
  • Allow the sauce to simmer gently for 15-20 minutes, stirring occasionally, until it thickens to your desired consistency.

Notes

Allowing the sauce to sit overnight in the refrigerator can enhance its flavors. The spices meld together beautifully, resulting in a more complex and robust taste.
