Ingredients
  

  • 1/2 cup banana ketchup or tomato ketchup if unavailable
  • 1/4 cup soy sauce
  • 1/2 cup apple cider
  • 1/4 cup brown sugar
  • 2 tablespoons lemon
  • 1 tablespoon oyster sauce optional, for extra umami
  • 4 cloves garlic minced
  • 1/2 red onion finely chopped
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon chili flakes optional, for a spicy kick
  • 1 tablespoon oil
  • Salt to taste

Instructions
 

Heat oil in a saucepan over medium heat. Add minced garlic and chopped red onion. Sauté until fragrant and lightly golden.

    Stir in banana ketchup, soy sauce, and apple cider. Let it simmer for a minute to blend the flavors.

      Add brown sugar, lemon juice, and oyster sauce (if using). Sprinkle in black pepper, chili flakes, and a pinch of salt.

        Stir the sauce well and let it simmer for 5–7 minutes until slightly thickened.

          Let the sauce cool down. Use as a marinade, glaze, or dipping sauce for grilled meats.

            Notes

            I always check the thickness before removing the sauce from the heat. Also, taste as I cook, adjusting sweetness or acidity to match my flavors.
