- 1 cup fresh red chilies any preferred variety
- 8 –10 garlic cloves
- 0.8 oz fresh ginger grated
- 2 tablespoons rice vinegar or white vinegar
- 1 tablespoon soy sauce optional
- 1 –2 tablespoons sugar adjusted to taste
- ½ teaspoon salt
- 4 –5 tablespoons oil
- 2 –3 tablespoons water as needed for blending
- 1 tablespoon toasted sesame seeds
- 1 teaspoon cornstarch
Wash and stem the fresh red chilies, then slice them into smaller pieces for easier blending. Peel the garlic cloves and grate the ginger so they’re ready to go.
Add the chilies, garlic, ginger, vinegar, soy sauce, sugar, salt, and 2–3 tablespoons of water to a blender. Blend until you achieve a coarse or smooth texture—whichever you prefer.
In a saucepan, warm 4–5 tablespoons of oil over medium heat. Once the oil is hot, carefully pour in the blended chili mixture. Stir well to combine.
Let the mixture cook for 6–8 minutes, stirring occasionally. In a small bowl, dissolve the cornstarch in a teaspoon of water, then pour it into the sauce. Continue simmering until the sauce thickens slightly.
Sprinkle in the toasted sesame seeds and give the sauce one final stir. Taste and adjust salt or sugar if needed.
Remove the sauce from the heat and allow it to cool completely. Transfer it to a clean jar and store it in the refrigerator. It tastes even better the next day.
