- 2 tablespoons butter
- 4 cloves garlic minced
- 1 tablespoon all-purpose flour
- 1 cup heavy cream or half-and-half for a lighter version
- ½ cup whole milk
- ¼ teaspoon Italian seasoning
- ½ cup grated Parmesan cheese
- Salt & pepper to taste
- ¼ teaspoon dried oregano optional
- ¼ teaspoon red pepper flakes optional, for a spicy kick
- Fresh parsley or cilantro chopped (optional for garnish)
In a medium saucepan over low heat, melt the butter until it sizzles but does not brown.
Add the minced garlic and stir continuously for about 30 seconds or until fragrant. Be careful not to burn it.
Sprinkle the flour over the garlic butter mixture, whisking constantly to form a smooth paste. Cook for about 1 minute to eliminate the raw flour taste.
Slowly pour in the heavy cream and whole milk while whisking continuously to prevent lumps. Increase the heat to medium-low and continue stirring as the mixture thickens.
Stir in the Italian seasoning, grated Parmesan cheese, salt, and pepper. If using, add dried oregano and red pepper flakes for extra flavor. Continue to cook for 2-3 minutes until the cheese is fully melted and the sauce reaches a creamy consistency.
Remove from heat and sprinkle with freshly chopped parsley or cilantro, if desired.
