Greek Tomato Rice is a flavorful and aromatic dish combining tender rice with ripe tomatoes, herbs, and spices. This traditional Greek recipe offers a delightful blend of tangy tomatoes and savoury seasonings, often enhanced with onions, garlic, and fresh parsley.
First, rinse the rice under cold water until the water runs clear. Set the rice aside. Next, peel and dice the tomatoes, finely chop the onion, and mince the garlic.
Heat the olive oil in a large saucepan over medium heat. Add the chopped onion and sauté until it becomes translucent, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
Add the diced tomatoes and tomato paste to the pan, stirring well to combine. Cook the mixture for about 5 minutes, allowing the tomatoes to break down and release their juices.
Stir in the rinsed rice, ensuring each grain is coated with the tomato mixture.
Pour in the vegetable or chicken broth, and season with salt and pepper to taste. Bring the mixture to a boil, then reduce the heat to low and cover the pan with a lid.
Allow the rice to simmer for about 20 minutes, or until all the liquid is absorbed and the rice is tender. Stir occasionally to prevent sticking.
Once the rice is cooked, remove the pan from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork and stir in the chopped fresh parsley.
