Ingredients
  

  • 2 tablespoons butter or olive oil
  • 1 small onion finely chopped
  • 2 –3 garlic cloves minced
  • 1 4-ounce can diced green chilies
  • ½ cup sour cream
  • ½ cup heavy cream
  • 1 teaspoon lime juice
  • ½ teaspoon ground cumin
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper to taste
  • Fresh parsley or basil chopped — for garnish (optional)

Instructions
 

  • In a medium saucepan, heat butter or olive oil over medium heat. Once hot, add the finely chopped onion and cook for about 3–4 minutes, until the onion becomes soft and translucent. Add the minced garlic and cook for an additional 30 seconds, until fragrant.
  • Stir in the diced green chilies along with their juices. Sprinkle in the ground cumin, dried oregano, and a pinch of salt and black pepper. Let the mixture cook together for 2–3 minutes.
  • Lower the heat and pour in the sour cream and heavy cream, stirring constantly to create a smooth mixture. Allow the sauce to gently simmer for 4–5 minutes.
  • Stir in the lime juice to add a touch of brightness and balance the richness of the cream. Taste and adjust the seasoning with more salt or pepper if needed.
  • Remove from heat and pour the sauce into a serving bowl or directly over your favorite dish. Garnish with freshly chopped parsley or basil for a burst of color and freshness.

Notes

Transfer the mixture to a blender or food processor and blend until the mixture reaches a smooth consistency.
