Ingredients
  

  • 1 tablespoon olive oil
  • 1 small onion finely chopped
  • 3 –4 cloves garlic minced
  • 4 –6 green chiles
  • 1 –2 jalapeños chopped (optional for extra heat)
  • 1 cup vegetable or chicken broth
  • 1 teaspoon ground cumin
  • ½ teaspoon oregano
  • Salt and pepper to taste
  • Juice of ½ lime
  • Chopped cilantro for garnish

Instructions
 

  • Heat the olive oil in a medium saucepan over medium heat. Add the chopped onion and cook for about 3–4 minutes. Stir in the minced garlic and cook for an additional 30 seconds, until fragrant.
  • Add the green chiles and jalapeños (if using). Cook for 2–3 minutes, allowing them to soften and release their heat and flavor.
  • Pour in the vegetable or chicken broth, then sprinkle in the ground cumin and oregano. Season lightly with salt and pepper.
  • Bring the mixture to a gentle simmer. Let it cook uncovered for 10–12 minutes, allowing the flavors to meld and the sauce to slightly thicken.
  • Remove the saucepan from the heat. Use an immersion blender to purée the mixture until smooth. Stir in the lime juice and adjust the seasoning to taste.
  • Transfer the green chili sauce to a serving bowl or jar. Top with chopped cilantro and enjoy it warm as a topping, dip, or flavorful addition to your favorite dishes.
