Start by melting the unsalted butter in a medium saucepan over medium heat. Keep your close eye on the butter to ensure it doesn’t brown. Stir occasionally to prevent burning.
Once the butter is fully melted, add the all-purpose flour. Whisk constantly for about 1-2 minutes. This forms a smooth, thick paste known as a roux which is crucial for thickening the sauce.
Slowly pour in the heavy cream and whole milk while whisking. Gradual addition is key to maintaining a smooth texture and avoiding lumps.
Then season the sauce with salt, ground black pepper, and a pinch of nutmeg (if desired). You can adjust the salt to your taste and continue whisking until the sauce thickens, which takes about 3-5 minutes.

Notes
