  • 2 tablespoons all-purpose flour
  • 1 cup heavy cream
  • ½ cup whole milk
  • ¼ teaspoon salt adjust to taste
  • ¼ teaspoon ground black pepper
  • A pinch of nutmeg optional, for added flavor

Instructions
 

  • Start by melting the unsalted butter in a medium saucepan over medium heat. Keep your close eye on the butter to ensure it doesn’t brown. Stir occasionally to prevent burning.
  • Once the butter is fully melted, add the all-purpose flour. Whisk constantly for about 1-2 minutes. This forms a smooth, thick paste known as a roux which is crucial for thickening the sauce.
  • Slowly pour in the heavy cream and whole milk while whisking. Gradual addition is key to maintaining a smooth texture and avoiding lumps.
  • Then season the sauce with salt, ground black pepper, and a pinch of nutmeg (if desired). You can adjust the salt to your taste and continue whisking until the sauce thickens, which takes about 3-5 minutes.
  • Once the sauce reaches your desired consistency, lower the heat and let it simmer for another 2-3 minutes. Stir occasionally to prevent it from sticking to the pan. Once done, remove from heat and serve immediately.

Notes

I have found that the nutmeg adds a subtle warmth and depth to the sauce, but it’s optional. You can skip it if you prefer a more neutral flavor.
