Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1 cup soy sauce
  • 1/2 cup mirin
  • 1/4 cups sake
  • 1/4 cup brown sugar
  • 2 cloves garlic minced
  • 1 teaspoon grated ginger
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 1/2 teaspoon black pepper
  • Optional: sesame seeds and chopped green onions for garnish

Instructions
 

  • In a bowl, combine soy sauce, mirin, sake, brown sugar, minced garlic, grated ginger, sesame oil, and black pepper.
  • Place chicken breasts in a resealable plastic bag or shallow dish. Pour marinade over chicken, ensuring it's fully coated. Marinate in the refrigerator for at least 1 hour, or overnight for deeper flavor.
  • Preheat grill to medium-high heat. Lightly oil the grates to prevent sticking.
  • Remove chicken from marinade, shaking off excess. Reserve marinade for later use.
  • Grill chicken for 6-7 minutes per side, or until cooked through and juices run clear. Baste with reserved marinade during grilling for added flavor and moisture.
  • In a small saucepan, combine cornstarch and water to make a slurry.
  • Strain remaining marinade into the saucepan and bring to a simmer over medium heat. Cook until sauce thickens, stirring constantly, about 3-4 minutes.
  • Slice grilled chicken and arrange on a serving platter. Drizzle with thickened sauce. Garnish with sesame seeds and chopped green onions if desired. Serve hot with rice and steamed vegetables.
