Ingredients
  

  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 medium onion finely chopped
  • 3 –4 garlic cloves minced
  • 250 –300 g mushrooms sliced
  • 1 can 400 g crushed tomatoes, blended
  • 1 tablespoon tomato paste optional, richer flavor
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon cumin
  • ½ teaspoon chili flakes optional
  • Salt and black pepper to taste
  • ½ teaspoon sugar optional, balances acidity
  • Fresh basil or parsley for garnish

Instructions
 

  • Heat the olive oil and butter together in a large pan over medium heat. Allow the butter to melt completely and blend with the oil before moving to the next step.
  • Add the finely chopped onion and minced garlic, and let it cook for another minute until fragrant.
  • Add the sliced mushrooms to the pan. Let them release their moisture and continue cooking until they become lightly browned and tender.
  • Pour in the blended crushed tomatoes. If you want a richer, deeper flavor, mix in the tablespoon of tomato paste at this stage and stir well to combine.
  • Sprinkle in the oregano, basil, cumin, and chili flakes. Season with salt and black pepper. Add sugar to balance the tomatoes’ acidity.
  • Reduce the heat to low and let the sauce simmer gently for 12–15 minutes. Stir occasionally to prevent sticking and help the flavors meld.
  • Taste the sauce and adjust seasonings if needed. Remove from heat and finish with fresh basil or parsley on top before serving.

Notes

Optional to make it even better (not required)
  • A splash of soy sauce or balsamic vinegar for umami.
  • A bit of vegetable broth if you want it thinner.
