Ingredients
  

  • 1 cup chopped roasted and peeled New Mexico peppers or frozen or canned
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 1 cup chicken or vegetable broth
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh cilantro for garnish optional

Instructions
 

  • Heat the olive oil over medium heat in a medium skillet. Add the chopped onion and sauté for about 5 minutes, or until it becomes soft and translucent. Then, stir in the minced garlic and cook for another minute until fragrant.
  • Toss in the chopped roasted New Mexico peppers. If you're using frozen or canned, just make sure to drain any excess liquid. Stir everything together and let it cook for about 3-4 minutes.
  • Sprinkle in the ground cumin and dried oregano, mixing well to coat the vegetables with those delicious flavors. Let it cook for an additional minute to release the spices' aromas.
  • Pour in the chicken or vegetable broth, stirring to combine all the ingredients. Bring the mixture to a gentle simmer and let it cook for about 10-15 minutes. This will help the flavors meld together beautifully.
  • After simmering, taste your sauce and add salt and pepper as desired. You can adjust the seasoning based on your preference.
  • If you like a smoother sauce, use an immersion blender to puree the mixture to your desired consistency. Otherwise, you can keep it chunky for added texture!
  • Serve your delicious New Mexican Green Chile Sauce warm, garnished with fresh cilantro if you’d like. It’s perfect over tacos, enchiladas, or as a dip!

Notes

If, you prefer a milder sauce mix in some roasted tomatoes or tomatillos. For an extra kick consider adding jalapeños or a pinch of cayenne pepper.
