Start by peeling and chopping the peaches. Chop the chipotle peppers and finely chop the onion. Mince the garlic and ginger. Gather all other ingredients to ensure you have everything ready.
In a large saucepan, combine the peaches, ketchup, apple cider vinegar, brown sugar, chopped chipotle peppers, adobo sauce, chopped onion, minced garlic, Worcestershire sauce, molasses, minced ginger, salt, and smoked paprika.
Place the saucepan over medium heat and bring the mixture to a boil. Once boiling, reduce the heat to low and let it simmer for about 25-30 minutes, stirring occasionally, until the sauce thickens.
Using an immersion blender, blend the sauce until smooth. If you don't have an immersion blender, you can transfer the sauce to a regular blender in batches and blend until smooth.
