- 1 tablespoon olive oil
- 1 small onion finely chopped
- 2 cloves garlic minced
- 1 cup fresh raspberries
- 1/4 cup ketchup
- 1 tablespoon balsamic vinegar
- 2 tablespoons brown sugar
- 1 tablespoon light corn syrup
- 1 teaspoon molasses
- 1/2 teaspoon lemon juice
- Salt and pepper to taste
Heat olive oil in a saucepan over medium heat. Add chopped onion and minced garlic. Sauté until the onion and garlic turn into brown.
Stir in fresh raspberries and cook for another 2 minutes until they start to break down.
Reduce heat to low. Add ketchup, balsamic vinegar, brown sugar, light corn syrup, molasses, and lemon juice to the saucepan. Stir well to combine. Simmer the mixture for 10-12 minutes, stirring occasionally, until it thickens slightly.
Season the sauce with salt and pepper according to your preference. Adjust sweetness or tanginess by adding more brown sugar or lemon juice if desired.
For a smoother consistency, you can blend the sauce using an immersion blender or transfer it to a regular blender. Be cautious as the mixture will be hot.
