Instructions
Season the pork chops with salt and pepper on both sides.
Heat olive oil and butter in a large skillet over medium-high heat. Add the pork chops and sear for 4-5 minutes on each side until golden brown and cooked through. Remove the chops from the skillet and set aside.
In the same skillet, add chopped onions and minced garlic. Sauté for 2-3 minutes until the onions are soft and fragrant.
Add chicken broth (or white wine for a richer flavor) to the skillet, scraping up any browned bits from the bottom. Stir in sour cream, Dijon mustard, Worcestershire sauce, dried thyme, and paprika. Mix well and simmer for 5 minutes until the sauce thickens.
Return the pork chops to the skillet. Spoon some of the sauce over the chops. Cover and simmer for 5-7 minutes until the pork is fully cooked and tender.
Sprinkle with chopped fresh parsley before serving. Enjoy your delicious sour cream pork chops!
Notes
After cooking, let the pork chops rest for 3-5 minutes. This helps redistribute the juices, making the chops more flavorful.
