Ingredients
  

  • 1 lb 450 g large shrimp, peeled and deveined
  • 2 tablespoons vegetable oil
  • 3 cloves garlic minced
  • 1 small onion thinly sliced
  • 1 red bell pepper sliced
  • 1 green onion chopped (for garnish)
  • 2 tablespoons soy sauce
  • 1 tablespoon ginger minced
  • ½ cup sweet chili sauce store-bought or homemade
  • 1 tablespoon lime juice optional, for tang
  • Salt & black pepper to taste
  • Green onions optional, for garnish

Instructions
 

  • Dry the shrimp, then season lightly with salt and black pepper.
  • In a large skillet, heat the vegetable oil over medium-high heat. Add minced garlic, ginger, and sliced onion. Stir-fry for about 1–2 minutes until fragrant and slightly golden.
  • Add the seasoned shrimp to the skillet. Cook for 2–3 minutes per side until they turn pink and are cooked through. Remove them from the skillet and set aside.
  • In the same skillet, add the sliced red bell pepper and stir-fry for 2 minutes. Pour in the soy sauce and sweet chili sauce, stirring well to coat the veggies. Let the sauce simmer for 1–2 minutes to thicken slightly.
  • Return the cooked shrimp to the skillet and toss them in the sauce. Add lime juice (if using) for a fresh, tangy kick. Stir well until everything is evenly coated.
  • Transfer the sweet chili shrimp to a serving dish. Sprinkle with freshly chopped green onions for garnish.
