- 1 lb 450 g large shrimp, peeled and deveined
- 2 tablespoons vegetable oil
- 3 cloves garlic minced
- 1 small onion thinly sliced
- 1 red bell pepper sliced
- 1 green onion chopped (for garnish)
- 2 tablespoons soy sauce
- 1 tablespoon ginger minced
- ½ cup sweet chili sauce store-bought or homemade
- 1 tablespoon lime juice optional, for tang
- Salt & black pepper to taste
- Green onions optional, for garnish
Dry the shrimp, then season lightly with salt and black pepper.
In a large skillet, heat the vegetable oil over medium-high heat. Add minced garlic, ginger, and sliced onion. Stir-fry for about 1–2 minutes until fragrant and slightly golden.
Add the seasoned shrimp to the skillet. Cook for 2–3 minutes per side until they turn pink and are cooked through. Remove them from the skillet and set aside.
In the same skillet, add the sliced red bell pepper and stir-fry for 2 minutes. Pour in the soy sauce and sweet chili sauce, stirring well to coat the veggies. Let the sauce simmer for 1–2 minutes to thicken slightly.
Return the cooked shrimp to the skillet and toss them in the sauce. Add lime juice (if using) for a fresh, tangy kick. Stir well until everything is evenly coated.
Transfer the sweet chili shrimp to a serving dish. Sprinkle with freshly chopped green onions for garnish.
