Ingredients
  

  • 6-8 fresh habanero peppers stemmed, seeds optional for less heat
  • 1 cup granulated sugar/ honey
  • 1 cup white vinegar
  • 2 teaspoons olive oil
  • 2 garlic cloves peeled
  • 1 teaspoon hot paprika
  • 1 tablespoon ground cumin
  • 1/4 teaspoon dried oregano
  • Pinch of salt

Instructions
 

  • Slice the habanero peppers, removing the seeds if you want a milder sauce. Peel and crush the garlic cloves.
  • Heat the olive oil in a medium saucepan over medium heat. Add the garlic and habanero peppers, sautéing until fragrant, about 2 minutes.
  • Stir in the granulated sugar, white vinegar, hot paprika, cumin, oregano, and a pinch of salt. Mix well to combine all the flavors.
  • Bring the mixture to a gentle boil, then reduce the heat and let it simmer for 10–15 minutes, stirring occasionally. Once the sugar has dissolved and the mixture has thickened slightly, remove from heat.
  • Transfer the mixture to a blender (or use an immersion blender) and blend until smooth. Adjust seasoning to taste if needed.
  • Allow the sauce to cool completely before transferring it to a sterilized jar.
