Ingredients
  

  • 2 ripe mangos peeled, pitted, and cubed
  • 2 cloves garlic minced
  • 1 tablespoon red chili flakes adjust to taste
  • 1/4 cup rice vinegar
  • 1/4 cup brown sugar or any natural sweetener
  • 1 tablespoon lime juice or lemon juice
  • 1/2 teaspoon ground ginger
  • Salt to taste
  • 1 tablespoon olive oil or any vegetable oil
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Instructions
 

  • Start by peeling and cubing the ripe mangos. Place the cubed mango in a blender or food processor and puree until smooth. Set this aside.
  • In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, just until it becomes fragrant. Avoid browning the garlic.
  • Add the mango puree, red chili flakes, rice vinegar, brown sugar, lime juice, and ground ginger to the saucepan. Stir well to combine and bring the mixture to a gentle simmer.
  • Taste the sauce and adjust the flavor. If you prefer a sweeter sauce, add a bit more-brown sugar. For extra heat, incorporate additional red chili flakes according to your taste.
  • In a small bowl, mix the cornstarch with 2 tablespoons of water until smooth. Gradually stir this mixture into the simmering sauce. Continue to cook and stir until the sauce thickens to your desired consistency.
  • Add salt to taste. Let the sauce simmer for an additional minute or two, then remove it from the heat.
  • Allow the sauce to cool before transferring it to an airtight container. Store it in the refrigerator for up to 2 weeks.

Notes

For the best flavor, use ripe mangos. They should be slightly soft to the touch and fragrant. If your mangos aren’t quite ripe, the sauce might lack the natural sweetness and depth of flavor.
