Ingredients
  

  • 1 tablespoon olive oil
  • 1 cup ketchup
  • 1/2 cup apple cider vinegar
  • 1/4 cup brown sugar
  • 2 Chipotle peppers in adobo sauce chopped
  • 2 tablespoons adobo sauce from the chipotle peppers
  • 1 small onion finely chopped
  • 3 cloves garlic minced
  • 1 tablespoon Worcestershire sauce
  • 1/2 cup molasses
  • 1 tablespoon minced fresh ginger
  • Salt & Pepper to taste
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground mustard

Instructions
 

  • Heat olive oil in a saucepan over medium heat. Add chopped onion, garlic, and fresh ginger. Cook until soft and fragrant, about 3–4 minutes.
  • Stir in the chopped chipotle peppers, adobo sauce, and smoked paprika. Let them sizzle for a minute to release their bold, smoky flavor.
  • Add ketchup, apple cider vinegar, molasses, Worcestershire sauce, and brown sugar. Mix well until smooth.
  • Sprinkle in ground mustard, salt, and pepper. Lower the heat and let the sauce simmer gently for 20–25 minutes, stirring occasionally, until thickened.
  • Adjust seasoning to your preference. For a smoother texture, blend the sauce before serving.
