Ingredients
  

  • 1 tablespoon vegetable oil
  • 1 cup tamarind paste or concentrate
  • 1/2 cup ketchup
  • 1/4 cup brown sugar
  • 1/4 cup apple cider vinegar
  • 2 tablespoons soy sauce
  • 2 cloves garlic minced
  • 1 pinch ground allspice
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground ginger
  • 1 teaspoon Worcestershire sauce
  • 1 habanero pepper
  • 1/4 teaspoon cayenne pepper adjust to taste
  • Salt and black pepper to taste
  • 1/4 cup water or juice adjust consistency as needed
  • 1/2 teaspoon hot sauce such as Crystal (optional)

Instructions
 

  • Heat vegetable oil in a saucepan over medium heat. Add minced garlic and habanero pepper, sautéing until fragrant, about 1-2 minutes.
  • Add tamarind paste, ketchup, brown sugar, apple cider vinegar, soy sauce, smoked paprika, ground cumin, ground ginger, Worcestershire sauce, ground allspice, and cayenne pepper to the saucepan. Stir well to combine. Season with salt and black pepper to taste. Add hot sauce if desired. Pour in water or juice to achieve desired consistency.
  • Bring the mixture to a simmer over low heat. Let it simmer gently for about 15-20 minutes, stirring occasionally, until the sauce thickens to your liking.
  • Taste the sauce and adjust seasoning if necessary. For a smoother texture, blend the sauce until desired consistency is reached.

Notes

Just be cautious with the habanero pepper and cayenne pepper, as they can add significant heat to the sauce. Adjust the amount according to your preference for spiciness.
