  • Cutting board & knife
  • Citrus juicer (optional)

Ingredients

  • 3 tablespoons soy sauce light or Thai seasoning sauce
  • 2 tablespoons fish sauce
  • 3 tablespoons palm sugar or brown sugar
  • 2 tablespoons ginger
  • 1 tablespoon rice vinegar or white vinegar
  • 1 tbsp lime juice
  • 2 –3 Thai red chilies

  • ¼ teaspoon ground black pepper
  • ½ cup Worcestershire sauce
  • fresh cilantro chopped
  • salt to taste

Instructions

  • In a mixing bowl, combine soy sauce, fish sauce, Worcestershire sauce, and rice vinegar. This savory trio sets the deep umami tone of your sauce.
  • Add palm sugar and stir until it begins to dissolve. Toss in the ginger, garlic, and Thai red chilies to introduce heat and aroma.
  • Squeeze in lime juice for tang and add smoked paprika and ground black pepper for complexity and a smoky kick.
  • You can add a bit of water to achieve your desired consistency. Stir gently to blend everything smoothly.
  • Sprinkle in chopped cilantro and salt to taste. Adjust the sweetness, saltiness, or heat as needed.

Notes

You can easily adjust the spice level by varying the amount of Thai red chilies or using milder alternatives.
