- 4 cloves garlic finely chopped
- 1 medium onion finely chopped
- 8 pounds ripe tomatoes seeded and diced
- 1 tablespoon tomato paste
- 1 teaspoon sugar
- Salt and black pepper to taste
- 1 handful fresh basil leaves torn or chopped
- 1 teaspoon dried oregano optional
- ½ teaspoon red chili flakes optional, for a little heat
Warm the olive oil in a large, heavy-bottomed pot over medium heat. Add the finely chopped garlic and onion, stirring gently until softened and fragrant without browning.
Stir in the diced ripe tomatoes along with the tomato paste. Allow the mixture to simmer so the paste deepens the flavor and the tomatoes begin releasing their juices, forming a rich base.
Sprinkle in the sugar to cut acidity, then season with salt and black pepper. If desired, add oregano for an herbal layer and red chili flakes for subtle heat. Stir occasionally to prevent sticking.
Reduce the heat and let the sauce simmer gently for 45–60 minutes. Stir occasionally as the tomatoes break down and the sauce thickens into a silky consistency.
Once thickened, stir in the fresh basil leaves. Allow them to wilt briefly in the residual heat before removing the sauce from the stove.
Taste the sauce and adjust the seasoning if needed. Once rich and silky, remove from the heat. Serve immediately over your delicious food or store in jars for later use.
