Ingredients
  

  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 5 tomatoes peeled and finely chopped
  • 1 tablespoon tomato paste optional, for a richer flavor
  • 1 teaspoon white sugar
  • ½ teaspoon salt
  • ½ teaspoon dried oregano
  • A pinch of red chili flakes optional, for heat
  • 1 teaspoon lemon juice
  • 2 tablespoons fresh parsley or fresh basil chopped (for garnish)

Instructions
 

  • Warm 2 tablespoons of olive oil in a medium saucepan over medium heat. Add the minced garlic and sauté for about 30 seconds, just until fragrant—don’t let it brown.
  • Stir in the chopped tomatoes with the tomato paste. Mix well and let the tomatoes soften for about 5–7 minutes, stirring occasionally.
  • Add white sugar, salt, dried oregano, and a pinch of red chili flakes if you like a bit of spice. Let the mixture simmer gently for another 10 minutes, stirring occasionally, until it thickens and deepens in color.
  • Once the sauce has thickened, stir in the lemon juice for a fresh, tangy lift. Adjust seasoning to taste.
  • Remove from heat and stir in freshly chopped parsley or basil. Serve over your favorite snack.
