- 2 tablespoons olive oil
- 3 cloves garlic minced
- 5 tomatoes peeled and finely chopped
- 1 tablespoon tomato paste optional, for a richer flavor
- 1 teaspoon white sugar
- ½ teaspoon salt
- ½ teaspoon dried oregano
- A pinch of red chili flakes optional, for heat
- 1 teaspoon lemon juice
- 2 tablespoons fresh parsley or fresh basil chopped (for garnish)
Warm 2 tablespoons of olive oil in a medium saucepan over medium heat. Add the minced garlic and sauté for about 30 seconds, just until fragrant—don’t let it brown.
Stir in the chopped tomatoes with the tomato paste. Mix well and let the tomatoes soften for about 5–7 minutes, stirring occasionally.
Add white sugar, salt, dried oregano, and a pinch of red chili flakes if you like a bit of spice. Let the mixture simmer gently for another 10 minutes, stirring occasionally, until it thickens and deepens in color.
Once the sauce has thickened, stir in the lemon juice for a fresh, tangy lift. Adjust seasoning to taste.
Remove from heat and stir in freshly chopped parsley or basil. Serve over your favorite snack.
