Instructions
Start by peeling and dicing the peaches. Finely chop the onion and mince the garlic. Measure out all other ingredients and have them ready to go.
In a medium saucepan, heat the olive oil over medium heat. Add the finely chopped onion and minced garlic. Sauté for about 5 minutes until they are softened and fragrant.
Add the diced peaches to the saucepan and cook for another 5 minutes. This allows the peaches to soften and break down slightly.
Stir in the ketchup, whiskey, apple cider vinegar, brown sugar, molasses, Dijon mustard, Worcestershire sauce, smoked paprika, liquid smoke, ground black pepper, salt, and cayenne pepper (if using).
Bring the mixture to a simmer. Let it cook for 25-30 minutes, stirring occasionally, until the sauce thickens and the flavors meld together.
Carefully blend the sauce until smooth using a blender or an immersion blender. Make sure the sauce has cooled slightly before blending to avoid any accidents.
