Ingredients
  

  • 2 lbs 900g yellow tomatoes, roughly chopped
  • 1 medium onion finely chopped
  • 4 cloves garlic minced
  • 2 tablespoons olive oil
  • 1 tablespoon sugar optional, depending on the sweetness of the tomatoes
  • 1/2 tablespoon red pepper flakes optional, for a bit of heat
  • Salt and freshly ground black pepper to taste
  • 1/4 cup fresh basil leaves chopped
  • 1 bunch fresh thyme
  • 1/4 cup fresh parsley chopped

Instructions
 

  • In a large saucepan, heat the olive oil over medium heat. Add the finely chopped onion and sauté until it becomes translucent, about 5 minutes. Add the minced garlic and cook for another minute until it becomes fragrant.
  • Add the roughly chopped yellow tomatoes to the saucepan. Stir occasionally until the tomatoes break down and release their juices, about 10 minutes.
  • If the tomatoes are not sweet enough, sprinkle in the optional tablespoon of sugar. Add the red pepper flakes for a touch of heat—season with salt and freshly ground black pepper to taste.
  • Reduce the heat and let the sauce simmer for about 20-30 minutes, allowing the flavors to meld together beautifully.
  • Stir in the chopped basil, fresh thyme, and parsley before serving. These fresh herbs add a delightful aroma and flavor to the sauce.
  • Serve this vibrant sauce over your favorite pasta for a delightful and colorful dish. Garnish with additional fresh herbs if desired.
