Equipment

  • Medium saucepan
  • Whisk
  • Measuring cups and spoons

Ingredients

  • 1 cup brown sugar
  • ¼ cup rice vinegar
  • 1 cup soy sauce
  • 1 cup mirin Japanese sweet rice wine
  • 1 cup’s sake Japanese rice wine
  • 1 cup granulated sugar
  • 6 cloves garlic minced
  • 1 tablespoon grated ginger
  • 1 teaspoon sesame oil
  • 1 teaspoon ground black pepper
  • 1 tablespoon cornstarch optional, for thickening

Instructions

  • In a saucepan over medium heat, combine the brown sugar, rice vinegar, soy sauce, mirin, sake, and granulated sugar. Stir well to dissolve the sugars.
  • Add the minced garlic and grated ginger to the saucepan. These aromatic ingredients will infuse the sauce with rich flavors. Stir gently to incorporate.
  • Pour in the sesame oil, which adds a nutty aroma and enhances the overall depth of the sauce. Sprinkle in the ground black pepper for a subtle kick.
  • Bring the mixture to a gentle simmer over medium-low heat. Allow it to simmer uncovered for about 15-20 minutes, stirring occasionally to prevent sticking.
  • If desired, create a slurry by mixing the cornstarch with a small amount of water. Gradually pour this into the simmering sauce while stirring continuously until the desired thickness is achieved.
  • Sample the sauce and adjust the seasoning according to your preference. You can add more sugar for sweetness, soy sauce for saltiness, or a splash of vinegar for tanginess.
  • Once the sauce reaches your desired consistency and flavor, remove it from the heat and let it cool to room temperature. Transfer it to a sterilized jar or bottle for storage.
  • This unique blend of East and West is perfect for marinating meats, glazing grilled vegetables, or drizzling over your favorite dishes. Store any leftover sauce in the refrigerator for up to two weeks.
  • Whether you're hosting a backyard barbecue or simply craving a taste of culinary fusion, Bachan's BBQ Sauce promises to elevate your dining experience with its harmonious blend of sweet, savory, and aromatic elements.
