Equipment

  • Grill or stovetop grill pan
  • Mixing bowls
  • Whisk
  • Basting brush
  • Tongs

Ingredients

  • 4 boneless skinless chicken breasts
  • 1 cup Japanese BBQ sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons sake
  • 2 tablespoons mirin
  • 1 tablespoon sesame oil
  • 2 cloves garlic minced
  • 1 teaspoon ginger grated
  • Salt and pepper to taste
  • Green onions and sesame seeds for garnish
  • 1 tablespoon cornstarch
  • 1/4 cup sugar
  • 1/4 cup rice vinegar
  • 1 tablespoon water

Instructions

  • Place the boneless, skinless chicken breasts in a large bowl.
  • In a separate bowl, mix Japanese BBQ sauce, soy sauce, sake, mirin, sesame oil, minced garlic, grated ginger, salt, and pepper. Pour the marinade over the chicken breasts, ensuring they are fully coated.
  • Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 30 minutes to allow the flavors to meld.
  • In a small saucepan, combine cornstarch, sugar, rice vinegar, and water. Cook over medium heat, stirring constantly until the mixture thickens. This will be your glaze for the chicken.
  • Preheat the grill or a grill pan on medium-high heat.
  • Grill the marinated chicken breasts for about 6-8 minutes per side or until they are fully cooked and have a nice char on the outside.
  • Alternatively, you can bake the chicken in a preheated oven at 375°F (190°C) for approximately 25-30 minutes.
  • Brush the cooked chicken with the prepared sauce on both sides during the last few minutes of grilling or baking. Ensure the glaze caramelizes and forms a delicious coating on the chicken.
  • Once the chicken is cooked and glazed, transfer it to a serving platter. Garnish with sliced green onions and sprinkle sesame seeds on top.
