Ingredients
  

  • 1/2 cup Water
  • 1/4 cup Rice Vinegar or apple cider vinegar
  • 1/4 cup Erythritol or any other sugar substitute like Stevia or Monk Fruit
  • 2 cloves Garlic minced
  • 1 teaspoon Fresh Ginger grated
  • 1-2 Red Chilies finely chopped, adjust to your spice preference
  • 1 tablespoon Soy Sauce tamari for gluten-free
  • 1 teaspoon Xanthan Gum 1 tablespoon cornstarch or arrowroot powder for thickening
  • Salt adjust to taste

Instructions
 

  • Combine water, rice vinegar (or apple cider vinegar), erythritol (or your chosen sugar substitute), minced garlic, grated ginger, and finely chopped red chilies in a small saucepan. Stir well.
  • Place the saucepan over medium heat and bring the mixture to a gentle simmer. Stir occasionally to dissolve the erythritol and evenly distribute the ingredients.
  • Pour in the soy sauce (or tamari for gluten-free) and season with salt to taste. Continue stirring until the sauce begins to reduce slightly, about 3-5 minutes.
  • In a small bowl, dissolve the xanthan gum (or cornstarch/arrowroot powder) in 2 tablespoons of water to form a slurry. Slowly whisk the slurry into the simmering sauce until it thickens to your desired consistency.
  • Taste the sauce and adjust the seasoning or spice level by adding more salt or chopped red chilies as needed.
  • Once thickened, remove the sauce from heat and allow it to cool. Transfer to a jar and store in the refrigerator for up to 2 weeks.

Notes

When working with chilies, always wash your hands thoroughly afterward and avoid touching your face. The oils from the chilies can causes irritation, especially in your eyes.
